Choosing Fish for Sushi

Sushi - Fish Secret - as part of the expert series by GeoBeats. Getting a best fish for sushi can be very difficult because the fish for sushi has to be very fresh, and also treated in the right way. So, if you just get fish that looks fresh in your neighborhood fish store, that might be a little dangerous. Always ask your fishmonger which fish is good enough to eat raw or could be made into sashimi. If they cannot give you any, then you should stay away. I, personally, go to Japanese grocery store and buy those fish that are specifically cut into sashimi. Usually, things like tuna, salmon and very fresh scallop can be made into sashimi, but you have to have a relationship with your fishmonger so that they know that you are really looking for a fresh one and that you do not want to take anything other than that. So, good luck. Stay healthy, and enjoy.
