Sour-chilli fish dry curry is much tastier when it cook under coconut charcoal! _

Sail Fish(Thalapath) Sour-chilli fish dry curry can be kept for a longer period when they are cooked until completely dry in the pot. With the usual traditional method of keeping a cley plate with red hot coconut charcoals on top of the fish pot while cooking, will evaporates the moisture in the fish pieces completely. This fish curry gets a unique taste by mixing the fish with the natural Sour-chilli paste, which is made out of gamboge(goraka), garlic, ginger and dried red chillis. Generally this curry goes well with potato white curry which I made otherwise my brother will be so sad as those combination is one of his favorites. Meanwhile Fried some indigenous Malla leaves as well, because they are grandmother’s true favorite and also malla leaves are very good & a well known edible herb as a cure for urine problems and aches and pains in the body!

Unable to step outside as its been raining for few days with intervals, the evenings have become very boring these days! But that evening went so fast with the excitement of the idea of making brother’s “Rotti kandu”(Roti-mountains). It’s an entirely unexplainable different taste when it get baked in the wood fired oven with capsicum and onion and spicy fish pieces. It makes one Roti-mountain is definitely a full wholesome meal as it include one boiled whole egg in the middle!

I usually use my spare time to experiment with different varieties of dishes as it truly gives me a meaning and a passion to my cooking! Even "Roti Kandu" is one of my spare time experiments. The normal Roti that is being usually done on a very hot pan on the stove, in this one it goes directly into the oven and gives a bit of a different taste because it is baked!. My brother who is an excellent food taster, indeed has a very rare skill of knowing all these different tastes in each dish. Thank God that it didn’t rain in that evening as otherwise brother's Roti Kandu dream would have completely washed away in the drain
