As you'll see, ice cream is no different. Check out our simple recipe for making your very own lime & coconut chocolate ice cream bars with a professional finish.

You'll Need (for 4):

For the ice cream:

- 13.5 fl oz coconut milk
- 2 tbsp coconut flakes
- lemon zest
- 2 fl oz lime juice
- 2 tbsp fresh mint
- ½ cup powdered sugar
- 2 fl oz milk

For the chocolate coating:

- 1 ⅛ cup white chocolate
- ⅓ cup coconut oil
- some yellow food coloring

Here's How:

1. Add all of the ingredients for the ice cream into a blender and break them down into a consistent, smooth mixture.

2. Divide the mix into four large ice pop molds and freeze them for three hours.

3. While the ice cream is in the freezer, melt the chocolate over a double boiler. Add the coconut oil and some food coloring.

4. The melted chocolate must be cooled to 85°F to be used. Pour it into a glass and dip the entire popsicle into the mixture. If the temperature is right, the chocolate coating should harden immediately and not drip. Place the ice cream bars in the fridge for several more minutes so that the coating fully hardens.
