Quick Meals with Stu Paprocki ep. 17 - Avocado Baked Eggs

"Cuckolding is for the sexually weak and mentally strong," warned my dad, to nobody in particular, in the middle of my surprisingly well-attended 9th birthday party. For my sake, I hope he's only half right.

Ingredients:
• 1 Avocado (Hass is the boss)
• 2 Eggs (medium ones work best)
• 2 slices of Crispy Bacon
• 1/4 cup Fontina Cheese (shredded or grated)
• Salt & Pepper (to taste)

I thought making it onto a cooking reality show would be my ticket to culinary fame, but that whole experience was a disappointment. Since then I have quit my job in a commercial kitchen and decided to start making my own cooking show, QUICK MEALS. This is episode 16.

Home is where the heart is, and good food brings family and friends together around the table. That's what I'm all about and that's what I want QUICK MEALS to be all about.

I am ecstatic because my girlfriend and I are back together. Her directing and editing skills have returned the rustic charm to QUICK MEALS.

My girlfriend is the breadwinner of our household. I have zero income at the moment and she supports me financially. She supports me emotionally too. While she was out earning that Jewish rye, I slept with the Backwards Hat Chef. Not the best way to pay your girlfriend back for all her love and support, trust me.

My girlfriend served me an ice-cold plate of revenge. Her and that rascal Mitch cooked it up right in my kitchen. I think you know what I'm talking about... copulation. It's going to be a tough bite to swallow, but I'm just happy the love of my life is back.

Recipe:
Start off by preheating your oven to 425 degrees. Then slice your avocado in half and remove the seed. Set your avocado halves cut-side up on a baking sheet. You might want to use something to stabilize your avocados and hold them in place, I'm using ramekins but a small baking dish or skillet could work too.

If the indentation left by the removed seed isn't large enough to accommodate your eggs you can dig out some of the avocado flesh with a spoon to make the hole bigger.

Then crack an egg into each of your avocado halves. Sprinkle some crispy bacon pieces on top, followed by some shredded or grated Fontina cheese. Top it all off with some salt and pepper (as always, I'm using white pepper).

Then place your avocado and eggs in your 425 degree oven for 15-20 minutes, depending on how hard you like your egg yolks. Personally, I always go with 17 minutes. Regardless of how long you choose to bake your berries (yeah, you heard that right, avocados belong to the berry family) you'll soon have another quick and delicious meal sure to make your taste buds PAP!
