Quick Meals with Stu Paprocki ep. 16 - Lemon-Garlic Mahi Mahi

Two weeks ago I thought Matthew McConaughey's skin could save my relationship with my girlfriend. Now I'm sleeping on a 62-year-old's Pinot Grigio soaked couch.

Ingredients:
Mahi-Mahi Fillet
1/2 Lemon
1 clove minced Garlic
1 tbsp. Butter
2 tbsp. White Wine
1/4 tsp. Thyme
Salt & Pepper (to taste)

I thought making it onto a cooking reality show would be my ticket to culinary fame, but that whole experience was a disappointment. Since then I have quit my job in a commercial kitchen and decided to start making my own cooking show, QUICK MEALS. This is episode 16.

Home is where the heart is, and good food brings family and friends together around the table. That's what I'm all about and that's what I want QUICK MEALS to be all about.

Recently I did something I never should have done. I was playing Mario Kart on the Wii gaming platform and foolishly selected the character Funky Kong on a track that doesn't suit his aggressively alternative lifestyle. I can't even type what happened next, but Funky Kong has caused some serious trouble for me on the raceway of life.

I was watching the movie Johnny Mnemonic alone in the dark yesterday and I got super emotional. Brooks is a calming influence, but unfortunately he wasn't around to talk to. He's the equipment manager for a Little League Baseball team and they had a game. At this point in my life, being hunted by assassins sounds better than lugging around all these horrible memories. So, if there's any corporation, or even a hobbyist, looking for a brain to implant a cybernetic device in, I think I'm ready to become chef Stu Mnemonic.

Recipe:
Start off by preheating your oven to 400 degrees Fahrenheit.

Take your half of a lemon and slice it into thin disks. Place 3-4 of them in the middle of your baking dish and place your mahi-mahi (skin side down, if your filet has skin on it) on top of your lemon disks.

Then it's time to sprinkle some thyme on your mahi-mahi. Follow that thyme with your minced garlic. Then cover your filet with your remaining lemon slices. Top it all off with a slice of butter. Then splash on some white wine.

Place your baking dish in your 400 degree oven. In about 20 minutes you'll have yourself another quick and delicious meal sure to make your taste buds PAP!
