Quick Meals with Stu Paprocki ep. 11 - Tomato Olive Chicken

A day of fellowship with my new friend Kyle is ruined when we discover the high seas are awash with horror.

Ingredients:
• 3 boneless skinless Chicken Breasts
• 28 oz. can whole peeled San Marzano Tomatoes
• 3/4 cup pitted Kalamata Olives
• 3 tbsp. Olive Oil
• 2 cloves minced Garlic
• handful of fresh Basil leaves (sliced into ribbons)
• Salt & Pepper (to taste)

I thought making it onto a cooking reality show would be my ticket to culinary fame, but that whole experience was a disappointment. Since then I have quit my job in a commercial kitchen and decided to start making my own cooking show, QUICK MEALS. This is episode 11.

Home is where the heart is, and good food brings family and friends together around the table. That's what I'm all about and that's what I want QUICK MEALS to be all about. I might have lost my way a bit lately and QUICK MEALS has suffered, but I'm going to fix that and get back to basics with this episode.

Again, I apologize to Demi Lovato and her entire family... and any other families out there of similar mixed ethnic backgrounds. What I said on the quesadillas episode was abhorrent and I'm truly sorry.

Recipe:
Here's how you make the sauce... Drizzle some olive oil in a saucepan over medium heat. Add your minced garlic and brown it nice and good (about 1 minute). Then pour in your can of tomatoes. Add a few dashes of salt & pepper (to taste). Take your fresh basil and cut it into nice horizontal ribbons, then add those to your sauce. Lower the heat, put a lid on your saucepan, and let your sauce simmer while you prepare the chicken.

Here's how you prepare the chicken... Shake some salt all over your raw chicken (both sides!). Heat a skillet over medium-high heat and then drizzle in some olive oil. The moment your oil begins to smoke it's time to add your chicken. Brown your chicken and then flip and repeat.

Finish your sauce off by adding your pitted Kalamata olives.

Then it's time to plate your chicken and spoon your sauce all over that good stuff.
