Quick Meals with Stu Paprocki ep. 8 - Steak

After this episode I had to take a few days off. Dry rubs aren't for everyone.

Ingredients:
• 1 Steak (an inch-thick bone-in steak is best for this recipe)
• 1 tbsp. Brown Sugar
• 1 tbsp. Salt (Coarse Salt works best)
• 1 tsp. Smoked Paprika
• 1/2 tsp. Cayenne Pepper
• 1/2 tsp. Garlic Powder
• 1-2 tsp. Canola Oil (or other Neutral Oil, to coat your pan)

I thought making it onto a cooking reality show would be my ticket to culinary fame, but the whole experience was a disappointment. Since then I have quit my job in a commercial kitchen and decided to start making my own cooking show, QUICK MEALS. This is episode 8.

Home is where the heart is, and good food brings family and friends together around the table. That's what I'm all about and that's what I want QUICK MEALS to be all about.

Recipe:
One of the most important aspects of cooking a great steak is buying a great steak. I like thick steaks. The thicker the better. And I like my steaks with the bone in, because bone in, flavor in.

When you get home with the steak try to take it out of the fridge about 30 minutes before you want to cook. You want your steak to be cool when you cook it, not cold.

The steak is king, but it's knight in shining armor for this recipe is the rub. Mix your rub ingredients together and then apply it to every inch of your steak. Don't forget the sides.

Hopefully you have a cast iron skillet, but whatever you're using you want to get it scorching hot. High heat is where steak flavor Pappens! Pour in some cooking oil (I use Canola oil). When your oil starts to smoke slap your steak down on the pan. If you've got an inch-thick steak and you want it medium-rare you'll want to cook it for 3-4 minutes, flip it and then give it another 3-4 minutes.

Set your steak on a plate and let it sit for 5 minutes. I know it's hard to let that beautiful steak sit there but trust me, you want those juices and flavors to set. You and/or your loved ones will thank me later.
