Quick Meals with Stu Paprocki ep. 6 - Kale Salad

You may know I'm not a fan of Ridley Scott's Prometheus. A lot of my Taste Buds say it's a movie that really makes them think. Well, I think the first thing I'm going to do when I get to a new planet is not take off my space helmet. Speaking of trillion dollar boondoggles, how about every major foreign policy decision the United States has made since the Coolidge administration. And when are we going to get the answers we deserve on Benghazi? Actually, let's just eat some kale. Kale's a superfood.

Ingredients:
• Kale
• 3 tbsp. Olive Oil
• 2 tbsp. Fresh Squeezed Lemon Juice
• 1 tbsp. Red Wine Vinegar
• 1 clove of Minced Garlic
• 1/2 tsp. Ground Cumin
• And several dashes of Salt & Pepper (White Pepper is best)

I thought making it onto a cooking realty show would be my ticket to culinary fame, but that whole experience was a disappointment. Since then I have quit my job in a commercial kitchen and decided to start making my own cooking show, QUICK MEALS. This is episode 6. Turns out I upset a few salad lovers out there when I dismissed a salad as a meal fit for a happy healthy family. I'm back to redeem myself in this episode. That's why I'm making KALE SALAD!!!

Home is where the heart is, and good food brings family and friends together around the table. That's what I'm all about and that's what I want QUICK MEALS to be all about.

Recipe:
Rinse, dry and tear your bunch of kale into nice bite size pieces. You can also buy a bag of rinsed and cut kale in most grocery stores, nowadays. Either way, add your bite size kale into a large bowl.

To make your lemon-cumin salad dressing add all your ingredients into a jam jar or small bottle (anything with a nice secure lid). Now shake that jar real good and mix up all those ingredients.

Pour your dressing over the salad. Your salad is good to eat right now but the longer you let your dressing soak into your kale the softer your kale will get. If you eat it right away it will be super chewy and crunchy. I like to let the dressing soak in for 30 minutes. IMO that's the perfect amount of time. If you like your kale soft I'd cover your bowl of kale salad and put it in the fridge for about 2 hours.

Regardless how long you let your kale soak, I guarantee that this salad will make your taste buds PAP!
