Mulled wine poached pears - Today's Special With Shantanu

Muld Wine that's quite famous in United Kingdom along with different textures of Cinnamon, Clove, Sugar and other spices, Chef Shantanu Gupte brings you this delectable Mulled Wine Poached Pears that leaves you wanting for more such delicacies.

Ingredients:

For Mulled wine poached pears:
500 ml - (2 Glass) of Red Wine
80-90 gms of Sugar
1 Cinnamon
2-3 Cloves
2 Pear

For Yogurt & Mint Dressing:
1 Bowl of Yogurt
Small Bunch of mint leaves
Few Cashew, Almond & Raisin
1 tsp Honey

Method:

- Heat 2 glass of red wine.
- Add 80-90 gms of sugar to red wine.
- Add cinnamon and gloves for flavor.
- Peal the skin of 2 fresh pears.
- Simmer the flame for the red wine to cook properly. The pears have to absorb the flavor and color of the wine in it.
- Add few finely chopped mint leaves to it.

For Yogurt & Mint Dressing:
- Strain the yogurt for 10 to 15 mins with the help of a strainer in order to get rid of the extra moisture.
- Add few finely chopped mint leaves.
- Add few cashew nut, almond and raisin finely chopped.
- Post the yogurt is moisture free, add it to the above mixture.
- Add 1 tsp of honey in the mixture to sweeten it.
- Yogurt & Mint Dressing is ready.

- Back to Pears:
- Leave the red wine to reduce.
- Once the red wine has reduced to half and has become think, take them off.
- Either serve the pears warm or chilled as per your preference.
- Remove the seeds from the pear and plate it along with the Yogurt & Mint Dressing.
- Use the remaining red wine for garnishing.
- Lastly, place a pinch of mint leaves right at the top
